Refreshing Strawberry-Feta Salad

When I started my website, I swore two things: my recipes wouldn’t have life stories before them, and I wouldn’t add salad recipes. I also never thought my salads would be so delicious–but here we are. At least I have stayed true to the life story before my recipes, right?

This recipe is ridiculously simple (only four ingredients) yet remarkably delicious and equally refreshing. It features sweet hints of strawberry and creamy deliciousness from the feta and pairs perfectly with my Deep-Fried Cauliflower Steak and Parmesan-Ranch Crusted Potatoes

If cauliflower steak isn’t quite your thing, that’s okay. This salad is great for any side, appetizer, or even by itself, especially during warmer weather. The strawberries and feta kiss the tomato so perfectly that it quenches thirst and delivers incredible flavor. We enjoyed this salad topped with Sir Kensington’s Raspberry Pink Peppercorn Dressing, which I eventually want to try to remake at home for cleaner ingredients.

Without further ado, I introduce my super simple strawberry-feta salad. This recipe is plant-based and vegan-friendly, and it can be made free from coconut, dairy, gluten, grains, nuts, and soy. With a minor tweak, it can even be whole-food plant-based (see recipe notes for details).

  • 1 oz. lettuce (chopped)
  • 1 tomato (chopped)
  • 4 – 5 strawberries (chopped)
  • Plant-based feta cheese (diced or crumbled, to taste)
  1. Combine in a bowl and serve with a dressing of your choice (I make homemade raspberry vinaigrette; recipe coming soon).
  • To make whole-food plant-based, you can make your own feta cheese (recipe coming soon).
